Summer Picnic

Yesterday, I went to Goodwill with my friend, Lillibeth. While we were there, I found a wicker picnic basket. Inside the basket, there were plastic cups, plates, spoons, and linens! This inspired me to find some summer picnic recipes.

Bologna Slaw Wrap Sandwiches

Prep Time: 15 minutes


Ingredients:

6 ounce pkg. bologna slices, chopped
2 cups deli coleslaw, drained
1 carrot, shredded
1/2 cup whipped salad dressing
1 tomato, seeded and chopped
6 slices American or Swiss cheese
6 (10-inch) flour tortillas

Preparation:

In medium bowl, combine all ingredients except for cheese and tortillas; mix well to coat. Line tortillas with cheese slices and divide bologna mixture among tortillas. Roll up tightly to enclose filling, wrap in plastic wrap, and chill until serving. Serves 6.

My Mother's Potato Salad

Prep Time: 35 minutes

Cook Time: 20 minutes

Ingredients:
5 pounds red potatoes
1 cup mayonnaise
1/2 cup Miracle Whip salad dressing (do not substitute)
1/4 cup milk
2 Tbsp. yellow mustard
Salt and pepper to taste
1 bunch green onions, sliced
1 bunch radishes, cleaned and sliced
6 hard cooked eggs, sliced

Preparation:

Boil the potatoes until tender. When cool enough to handle, peel the potatoes. Meanwhile, in a large bowl blend mayonnaise, Miracle Whip, milk and mustard until smooth. This dressing should be fairly thin, so don't skimp on the milk! Add salt and pepper to taste. Cut the warm potatoes into cubes and add to the dressing, folding carefully. Add green onions and radishes and blend well. The hard cooked eggs are layered on top for a pretty presentation. Chill well to let flavors blend. Serves 10.


Cantaloupe Popsicles

Prep Time: 15 minutes

Ingredients:
6 oz. can frozen fruit juice concentrate (pink lemonade)
3 cups cubed cantaloupe or other melon
3/4 cup water
10 paper drink cups
10 wooden Popsicle sticks

Preparation:

In blender or food processor, combine fruit juice concentrate and cantaloupe, process until smooth. Fill each drink cup with about 1/3 cup of this mixture, then freeze until partially frozen, about 1 hour. Insert wooden sticks and freeze until firm. To serve, peel away the paper cup.

Serves: 10

My mother was given a Betty Crocker cookbook years ago and I have been using it to make banana bread for my family and grandpa. The pages are beginning to stick in places, and I think it might need to be retired.
