Fresh Baked Scones
2 cups unbleached flour
2 tablespoons sugar
4 teaspoons non-aluminum baking powder
1/2 cup light olive oil or 1/2 cup real butter
3/4 cup milk
Mix dry ingredients in a bowl, wet ingredients in a large measuring cup, and blend together. Put on floured wax paper and knead 12 times. Pat out to 3/4 inch and cut with round cutter. Place on ungreased baking pan and bake at 375 for 15 minutes, or until lightly brown.
There are many variations for scones. You can add 1/2 cup walnuts, chopped or unchopped, or 1/2 cup currants. Scones taste best with butter and homemade strawberry jam. You can also sprinkle cinnamon on top of scones. Enjoy with a cup of tea!
